Homemade Ice Cream – who doesn’t love this stuff!   It’s sweet, refreshing, creamy, and you can load it up with lots of your favorite ingredients like crunchy nuts, colorful candies, ripened fruits, and aromatic  spices.   I’ve tasted many flavors of ice cream, but I’ve never been adventurous enough to try garlic or even lobster ice cream!  Yes, it’s true – those are real flavors, no kidding.

Of course, you can buy this tasty confection at most stores, but what about making it at home.  Do you know how to make homemade ice cream?  Is it worth the time and effort?   Is it easy?  It surely is!   By following a few simple steps, you can be on your way to producing a treat that I’m sure will please you and your family.  Plus, it’s fun, and the neat thing is that you control all the ingredients.

3 Easy Tips For Making The Best Ice Cream Ever

1.  Use quality ingredients.

2.  Strain the custard before freezing for a superior end product.

3.  Make sure to use plastic wrap to cover the custard before putting in the refrigerate to prevent a skin from forming on the top surface.

Okay, let’s make a batch of ice cream.  But, the first decision.  Do you want to make ice cream using an ice cream maker?  Homemade ice cream can be made with or without a machine.  Ice cream made with a machine tends to be a little creamier than ice cream made without one, but both are crazy good 🙂  The following homemade ice cream recipes can be used with or without an ice cream machine.

Honey Vanilla Ice Cream with Pecans

Yield:  About six servings (Depending on who’s doing the eating.  In my house, it makes 3 servings :-))

2 cups heavy (whipping) cream 

2 cups milk

5 egg yolks

1/2 cup honey

1 cup brown sugar

1 tablespoon real vanilla extract

1/4 teaspoon salt

1. In a medium sized saucepan, heat the milk until bubbles form around the edge of the pan, but do not boil.

2. In a bowl, beat egg yolks, honey, brown sugar, salt and vanilla until thick and frothy. Slowly pour the hot milk into the egg mixture, whisking as you pour.  Be sure to pour the mixture slowly and whisk continuously so that you don’t end up with scrambled eggs 🙂

3. Put the mixture back into the pan and heat gently over low heat, stirring  constantly with a wooden spoon until the mixture thickens and coats the back of the spoon.  Once again, do not let the mixture boil.

4.  Take the mixture away from the heat and add the cream and combine well.  At this point, strain the custard so that you are left with a smooth, creamy mixture that will be your basic ice cream recipe; but don’t stop there.

Here is where you can get creative by incorporating ingredients that you love such as 1/2 cup of nuts, candy, or even a shot of rum or liquor, or even add 1/4 teaspoon of cayenne pepper for an interesting after flavor .  Cover the custard with plastic wrap so it doesn’t form a skin on the surface, and then refrigerate custard until cold.

5. Process with an ice cream machine, following the manufacturer’s directions.  If you don’t have an ice cream machine, no worries.  Just freeze the custard in a plastic container, and stir it a few times as it freezes so that the consistency is nice and creamy and the ice crystals are broken up.

If you’re pressed for time, here’s a  recipe that does not use eggs and does not need to be cooked.

Heavenly Honey Ice Cream

2 cups heavy whipping cream

1 cup milk

1/2 cup honey

1 tablespoon real vanilla extract

1/4 teaspoon salt

Mix together the honey and cream until well blended.  Add the milk, vanilla, and salt and blend well.  Of course, you can add now add whatever ingredients tickle your fancy.

Process with an ice cream machine, following the manufacturer’s directions.  Enjoy.
